Does anyone have any suggestions for flavoring a shrimp & veg stir fry without soy sauce?  I'm hankering a chinese style dish but would like to avoid the soy sauce since both soy and wheat are avoids.

sauce can be made as compliant as you wish......

add the spices to a some ghee or olive oil and let them release their flavor for a few mins.....
to that you can saute some onions and garlic, depending.......then add some stock and let it simmer and reduce.....voila!

to that you can stir in some butter to thicken, or compliant flour or arrow root, if you like.

For a nice Asian flavor, perhaps add common Asian seasonings and spices such as fresh lemongrass, fresh cilantro, fresh garlic, fresh ginger, tumeric powder.

You can also add chili powder, chili paste, compliant curry powders.  

Finishing the stir fry off with organic roasted (dark) sesame oil will add an Asian flair.
