Just thought I would share how I fix walnuts, pumpkin seeds mainly, but you can do almonds, pecans this way as well.

There are so delicious when prepared this way!

Walnuts
Put 4 cups in a bowl of warm water
2 tsp sea salt
let sit overnight.  
In a.m. put in dehydrator at 150 or in oven on very low.  Leave until they become nice and crispy, several hours.  Yummy, much easier to digest, and nutrients are better assimilated.  

Pumpkin seeds
SAME except use 1 tbsp sea salt
You can also add 1 tsp cayenne pepper to soak water for spicy pepitas

Almonds
2 tbsp sea salt

Pecans
same as walnuts

NO!  These are shelled pumpkin seeds.  Sorry for the confusion!

I've never taken the almonds out of the skin, but you could, or you could buy blanched.

Yes--they are perfect when prepared this way. Thanks for sharing your recipe, Tina! :) Try using the nuts in a trail mix, with chopped dried figs, dried currants, and (if you feel like it) some dark chocolate chips. Ghirardelli makes 60% cacao chips and they are delicious! A handful of mix for mid-afternoon snack has enough protein to keep me satisfied until dinner--no more filling up on junky stuff!

Thanks Tina for sharing your tips.  

Question: In the morning, do you rinse the nuts/seeds in clean water before putting them in the dehydarator, or do you just drain the water and put the salted nuts/seeds directly in the dehydrator?  

I do soak my nuts and seeds overnight, but I let them air dry naturaaly.  This works well for me, since I only use a small quantity to soak overnight and not 4 cups of nuts/seeds.

I usually just put the nuts directly in the dehydrator.  I don't think it's necessary to rinse them, but someone may have a better idea of this.  If rinsing is good, I would like to know too!

I make a big batch at a time this way, but may need to do a little each night, just enough for a handful, that way I won't overeat on them!!!   :P

rinsing would take away the little salt left on each nut to give it flavor.

I have noticed cocoa nibs (unsweetened) appearing in our health food stores.  I'll bet they would be a great addition to these delicious nuts, maybe with a bit of raisins or other dried fruits.  Fantastic survival food when out in the car all day, or at work with folks pigging out on junk food all around.

I know people like Brig can have the regular dark chocolate chips with sugar, but not so for us nonnies!
