Can anyone please share recipes for Fermented Veg, I am so uneasy about making these and need some tips :)

I've only done cabbage, but it's an avoid for me, so I want to learn to do others.  I'm told fermented carrots are much like doing cabbage, with just salt, so I may try that.  I'm nervous, for some reason.

In this video the guy says, that in order to ferment vegetables you should use either cabbage or cucumbers in the mixture.

Is this true?

C_Sharp wrote that Lola uses Plyflora in fermenting vegs.

Also, re cucumbers, I have seen them fermented only together with dill and garlic, as spices.

Ribbit-- use a brine solution and join the facebook group they are really fun.

I just did green beans and carrots-- and bussuel sprouts.

I am nervous too, I have done cabbage carrot and radish with some salt and a probiotic capsule sprinkled in with a bit of filtered water to cover the top and some cabbage leaves on top to keep the veggies under the brine.  Its been in a jar for 4 days sat on my kitchen bench, I have no idea what to do with it next or how long to leave it.  Its winter in Western Australia, although I wouldn't say its very cold indoors with heaters on etc.

Cabbage is an avoid for me too, I have just changed from Teacher to Warrior and Cabbage has now changed to an avoid, bit disappointed. But I just wanted to give it a go.  Hopefully I can find other fermented veg recipes with beneficial veg instead.  You can ferment any veggies, I have seen recipes and posts from others who ferment veggies without cabbage.

I've only ever fermented vegetables in salt or salt/water. They turn out delicious. I've done an amazing rendition of turnip kimchee, carrots/ginger, and cabbage (back when it became a neutral for a few months). I don't have a fancy Hursch crock; just use mason jars and lid siphons.
