That recipe contains 3 O nonnie avoids: buckwheat, dates, and cinnamon.  I would expect a "right for all types" recipe to use brown rice flour and molasses and/or agave. It wouldn't hurt the recipe to omit the cinnamon, but the dates and buckwheat are integral parts of the recipe.

This recipe is 99% perfect for me and looks really yummy.   I can leave out the cloves but for just a 1/2 tsp for 16 gingerbread men, I think I will use it anyway.  Happy to see the buckwheat sub to brown rice flour. I don't have buckwheat flour in the house and want to make these right now.

I couldn't taste any evidence of chia seeds in this recipe.  Cookies were very good but if you want to try something else, consider whole flax seeds.  I really think the purpose of the seeds was to solidify
the batter, make it easier to roll out and cut into cookies.  I didn't have a little gingerbread cutter so
I just cut them by hand and made triangles, squares and some odd shapes.  All good!

I think we're expected to not read these PL threads, or at least Not Too Closely.
