Hey guys. I've come up with some awesome ideas to get more nutrition into my kid lately, who can't do grains at the moment. My favorite so far is granitas! The best part about granitas is you can take whatever fruit is in season, and when it's right at the point where it might go bad if you don't finish it all in time, you can just cook it up and the granitas last forever in the freezer.

They're super easy, and you can use whatever compliant sweetener is available for you. So far, we've done cherry, mango, and rapsberries.

Since we're doing a SWAMI version of the SCD diet, we're at a phase that requires us to cook our fruit (except bananas). Luckily, that makes the texture of the granitas better. You don't have to do it if you're just using juice, but if you want to use the whole fruit, boiling works well.

Take a couple of cups of fruit (or however much you want!), put it into a pan, and add a few tablespoons to 1/2 cup of water (you can add more as the process goes on). Turn the heat up to get your fruit to a simmer (maybe medium heat). Let the fruit release some juice (a couple of minutes), and then crank up the heat to get the fruit to break down and get soft. When the fruit is at the syrupy mushy mess, you can turn off the heat. Either leave the fruit as is, or add a little honey (or stevia or agave or whatever is compliant for you). I usually add a couple of tablespoons of honey.

Then you can strain some of the solids out (definitely in the case of the seeds in raspberries) with a strainer. In the case of the mangoes, I just threw the chunks in the blender and that's it. Some fruits will need blending, some won't. Play it by ear and however you like the texture.

Pour it into a pyrex dish so that it fills it up 1/4-1/2" up the side. Then cover and throw it in the freezer. You can usually let it go for an hour before you do anything. Then every 20-30 minutes, take a fork and stir or break up the little ice clumps that form. You're going for a slushie texture, not a sorbet.

It takes about four hours and then it's good for weeks in the freezer.

Also, you can add vanilla (goes well with cherries), or various citrus juices to brighten things up.
