Does your body absorb nutrients from avoids? Like calcium from dairy or protein from whey. My husband is certain he gained weight in muscle mass from milk and whey shakes in college.

Since you can absorb toxins from avoids, I am certain that you can absorb nutrients from them as well...  The question is - Do you gain more benefit from the avoid than damage?

He gained muscle mass from the combination of nutrients and exercise.

Yes, avoid foods generally have some nutritive value - even if it is just caloric content.
