Crunchy Chocolate Amaranth

Just added this recipe to the Recipe Base.  Since I have Amaranth as a diamond and was struggling to figure out a way to eat it so that it was enjoyable, I stumbled upon the fact that you can pop it similar to popcorn.  I then looked at my other SWAMI ingredients and figured I'd try a few things, and Voila! this recipe was born.  It is now a main staple of my carb portions and it's a diamond!  Gotta get those diamonds in your diet.  And carbs have been the toughest category to integrate superfoods and diamonds into my diet, and now, it's a piece of cake...well, not cake, but some tasty Crunchy Chocolate Amaranth.

Other than added some to my "non-corn" cornbread my amaranth has sat in the frig forever. The balls would make a great treat, I will try with honey. Would make great "cookies" for BD baby shower. I've so got to try these.
