It sounds good to me, everything except the psyllium husks (avoid on my swami), and I have no idea what to sub for those...but if you try it, post about your experience!

Some substitution ideas:

Ground Flax seeds
Ground Chia Seed
Half the amount of Carob flour

Sounds really good, C_Sharp. I'm sure I would like it better with some carob flour too. Those little expensive squares I find sometimes that look a little like this bread are delicious to me. (They don't have any psyllium in them, either!) It would be great to have something like this to have as toast! Wow! I'm a super fan of ground chia and flax seed too.

In order to adapt this recipe so I can use my most compliant ingredients, I'd have to avoid oats (because even gluten free oats bother me) and I would sub quinoa flakes, I need to avoid psyllium husks and maybe I could use hemp seeds or more flax.  It looks so pretty sliced....and I love the dense grainy texture of this bread. If someone tries it please post your results. Looks like it would be delicious!  Thanks for sharing Spring

I found a recipe for a bread in the Clean Living magazine which is no longer in print called Honey Almond Sunflower Loaf.  I thought it was excellent.  It can also be made into muffins by simply reducing the baking time to 15 to 20 minutes. The recipe is as follows:

1 cup almond meal
3/4 cup buckwheat flour
1 1/4 cup quinoa flour
3 tsp. baking powder
1 egg
2 egg whites
1 cup unsweetened soy, almond or rice milk
1/3 cup olive oil
2 T raw organic honey
1/4 cup plus 1 T unsalted sunflower seeds (raw or toasted)

Preheat oven to 350.  In a medium bowl whisk 1st 4 ingredients together.
In a small bowl whisk egg, egg whites, milk, oil, honey and 1/4 cup seeds.  Add wet ingredients to dry ingredients and combine.  Do not over mix.

Mist a 9 or 10 inch loaf pan with cooking spray (I use parchment paper - much easier to get out of pan).  Pour batter into pan and sprinkle remaining 1 T sunflower seeds over top of loaf.  Bake 40 to 45 minutes.  Cool before slicing.  Delicious and all diamonds or superfoods.

this is much more compliant for me!! yay!!!   except i would use pumpkin seeds.  sunflower is AVOID.

This is a great direction to go in!

The dates no doubt would hold it together better and obviate the need for the psyllium (which otherwise I suspect would be necessary)?!

I've never seen carob powder!  Is that a common item at a local health food store?

Carob powder was half
ground chia and ground flax were one to one.

Should not even need to go to a health food store (unless you insist on organic). Major grocery stores stock carob powder.

Bob's Red Mill would be the most common and is sold in bags.

Chatfields is the second most common variety and is sold in cans.

If you go to the type of health food store that primarily sells supplements, than you would look for the NOW brand.

normaly I would say yes to the pumkin seeds but since I have been pregnant they make me just as ill as the sunflower seeds. last two times I had them I spent the rest of the day with an uneasy stomach, nasty tasting burping, and generaly not feeling too hot. too much oil in them maybe?

I'm downright bothered that I have not gotten this made yet! I did get a chance to read about a tenth of the blog comments and found what I consider good substitutions for me. I really like the ideas from others here, too, suggesting using Carob, more chia/flaxseed and adding dried fruit. I think there is something about letting this mixture stand for hours that makes the bread so delicious. So I will definitely allow plenty of hours for that step! I can't have sunflower seeds or psyllium, and oats are a black dot for me, however, oat bran is a neutral. So I do have some delicious options to make a bread that I will enjoy making a long time! So I am hoping to be able to get this together this week.

I didn't make this but I did make an interesting snack bread last night. nothing I make ever rises much so I do a lot of flat breads. last night I wanted sweet bread so I had
2 cups of whole spelt flour
1/2 cup of oatmeal flour
1/4 raw suger
6 dried apricots diced
about 2tbs of honey desolved in 1 cup warm water
the result was almost a thick pancake batter which I poured onto a hot backing stone at 350 and let cook for maybe an hour and a half
it gave me a thick flat 'loaf' that I cut into inch strips the outer crust was a bit chewy but the inside was like a pancake sweet and moist

Carob and ground chia seed are such a good combination to me. I have been making muffins with those two and other ingredients for several months. They turn out VERY dark - almost as dark as a brownie. Sooo, a light bulb went on the other day, and I asked myself why I hadn't already been making bread instead of muffins out of this mixture.   Anyway, I sliced a muffin to see how it would toast, and it was very good. Held together very well, moist on the inside and toasty on the outside.

Thinking about this, I am wondering about adding an egg to the Life Changing Bread (at least one) so I won't have to worry about having the consistency psyllium gives when I do the subs. I would keep it in the fridge for the "curing" process.

Off subject, but, boy, there is nothing like getting outside and getting yard work done after being stuck inside for days!! I even got some painting done on our deck chairs. Already had two coats of primer on them. Turning cold again tomorrow, though, so the chairs will live in the garage until better weather.

Also, started taking olive leaf extract today, and I think that added to my energy and feeling of well-being. I know Bach olive is GREAT so maybe this will be too!
