I just cook it and add a shake of sea salt, plus butter and maple syrup or honey. If you can't have butter, ghee works just as well. When making for my B son, I'll sometimes use whole milk instead of butter- but only about a tablespoon mixed in after cooking. He doesn't like it cooked with milk.

We rarely eat any kind of grains for breakfast, but about once a month we do enjoy a nice big bowl of oatmeal. Here is how I cook our oatmeal:

I use either soy or almond milk for half of the liquid, depending on which kind I've made lately.  (and "a little shake of sea salt")

Cooking time varies by the kind (old fashioned, quick, etc.), so follow the directions that come with your oats.

I always add chopped dried fruit while it is cooking. I add a little cinnamon, but B's cant have that - try a little ground nutmeg.

When it is ready to serve I top it with chopped walnuts to supplement the low amount of protein in the oats, and a drizzle of maple syrup.   BIG YUM.

ghee and butter are both dairy and I get like 4 per week. I wonder if evoo would work. I can have 1tsp 2x a day if I use that for all my oils, and thats very doable. Im trying to get less yogurt, but adding oatmeal. Also good fat turns off the internal switch that keeps saying "Im hungry, feed me".

Honey sounds good too. I have organic dried cherries I can add too, not sure if I want to combine honey and cherry, or honey and evoo, or cherry and evoo.

I cook a handful of cranberries just until they pop, then add oatmeal until cooked.  I usually add applesauce for sweetener and liquid instead of any milk substance, although I have used peanut butter and water to make a milky sub...

Get a container of roasted walnut oil and use that in place of the butter or ghee.  EVOO doesn't go all that well with oatmeal, but the walnut oil makes EVERYTHING delicious!

I try to eat low carb, even for breakfast.  But as the cooler weather approaches, I might try having oat bran again.

Yes, I use oat bran, rather than oats.

I make it savory with ghee, sea salt, ginger, Type O protein powder and carob powder.  Perhaps cinnamon.  Absolutely no sweetener, otherwise I'd need to have another breakfast before I leave the house.

I mix the dry ingredients first, then add the water (or you could add compliant nut / seed milk).  I let it stand 1/2 hour before stirring once more and then heating in the microwave.  I think the 1/2 soaking step is important for me -- otherwise I seem to get gas.

I've been meaning to try green tea in place of water, but that would just add complexity to the process.  It's easier just to brew a cup of tea to have separately.

My SWAMI diet is a blend of BTD and GTD Explorer, but I'm not totally compliant.  Also I try to choose foods that have a Low Glycemic index.  DW and DD are A+, probably also Explorer.

Every third morning I make old fashioned oatmeal;

oats, almond milk, water...cook slowly...top with ghee, cinnamon, honey...
sometimes I add dates or cranberries or chopped pecans with the toppings

The best taste is to top it with brown sugar and butter!

I use a half cup oatmeal, 1 cup water, stir together and microwave for 3 mins. You can then add what you prefer, honey, fruit etc.
You can use the same recipe for stove top cooking as well if you don't like using microwave cookers. serves 1 person, very simple, just adjust quantity accordingly for more people. Marty s

1 cup of oatmeal then 3 and half cups of water then I add cocoa and muscubado sugar. You can put muscubado before or after.

What has surprised me? What has touched me? What has inspired me?

I asked because I couldn't imagine any one person eating that much oatmeal.

"medium size cup that i dont know the portion" sounds like you're using "cup" to refer to a scoop and not a container that used to measure 8 fluid ounces.  Now it makes sense.
