My hubby is an A (even though he would rather be an O).  Currently he stops at any fast food place he can find to eat breakfast, and weight gain is a problem.  Can you tell me what you eat for breakfast, and maybe he can get some ideas.  Remember, cooking a meal on a work day morning is probably not going to happen!  Thanks, m.

You could cook steel cut oats, or oat groats the night before (make enough for a few days) and he can just microwave to heat up with some fruit/compliant liquid/sweetener.  

I have made an egg frittata on a Sunday evening for breakfast warm up in the am on a weekday.  Also do ahead...I make almond flour scones to be taken to work for breakfast.  You could bake with any compliant flour or make muffins for part of the breakfast.  I also make small turkey sausage patties on the weekends and freeze them.  They thaw quickly and can also be reheated in the morning.

If he eats rice, you can make rice on the weekend and he can reheat that in the morning with compliant milk(rice,soy,almond) add fruit and sweetener and it is like a cereal.

He could also just reheat some leftover dinner from the night before.  

It takes seconds to reheat most of these things in the microwave.

Boiled eggs, fruit, nuts and trail mix from dried fruits and nuts are always portable. Eggs and spelt toast and sometimes pancakes  with blueberries, strawberries or bananas made from spelt flour with maple syrup.

I make a Bircher style muesli to last about 4 days, or you could probably even do more - it seems to keep really well.

I mix approx:

2c wholegrain oats
1 or 2 tbsps flaxseed meal
currants
cranberries
blueberries
walnuts
1/2 tsp sea salt
1 or 2 tsps honey
1/2 to 1 tsp cinnamon
2 grated organic apples
approx 1 c (or more)of natural unsweetened yoghurt
a "splosh" of apple juice to moisten and soak oats, nuts etc.
a squeeze of lemon or lime juice

Mix all together and put in covered bowl in fridge and eat as required.

Or I will just cook a pot of quinoa or buckwheat, keep it in the fridge and add yoghurt, dried fruit, nuts, cinnamon, honey etc each morning as required. Quinoa is also great for lunches/dinners made into salads, so it is very handy to have at hand in the fridge to grab and transform into whatever you need.

Fruit and yoghurt.  Or fruit and whatever.  Soup.  Turkey sausage.  A hardboiled egg on the go.  You can eat them in the car.  I think fruit with some kind of protein is the best choice.  At least for me it is.  I don't do well on grains in the AM.  I know some people do though.  But I would be careful as too much carbs might set up a crash.  I personally think you almost NEED some protein in the morning.  But like I said, that's from my experience.  And fruit just feels right.  Especially watery type fruits.  Grapefruit.  I had a super juicy peach this morning.  Oh man it was good.  It was the first we got them in fresh this season.  Mmmmmmm...

I make up enough whole grain cereal (cooked in slow cooker) to last a week.  I add ground flax/sunflower seeds/almonds and fruit to the cereal each day. This way what you add can be a little different each day.  


Gluten/Casein and Yeast sensitivity.

I sometimes make the turkey sausage recipe from the swami cookbook and also make deviled eggs ahead.  My DH (Nomad) loves to take that to work for breakfast.

Yum - I am going to try those today ABJoe - they sound great, although I struggle to find cranberries without sugar in them here. Maybe I will just try all blueberries.

I would make them with the pumpkin substitute but I would have to use a different flour.  Spelt has gluten in it and I can't have that.  Maybe almond flour would work.

The good thing about these muffins is that there are endless possibilities for the creative cook.  It was originally a recipe with multiple options in a cookbook, but we changed the flour to spelt and made the adjustments to liquid, etc...  I am curious how almond flour would work, as my DD has been having a problem with gluten flour now as well...  I don't have a method for getting a consistent texture flour from grinding almonds, though.  They would clog the stones in the mill and the Vitamix doesn't provide an even grind.  In a pinch, I would use it and put up with some half almonds, though.

We buy fresh cranberries at Thanksgiving and freeze many for use throughout the year.  All blueberries will work, although they may be more moist...

I made the muffins with mostly blueberries and a few dried cranberries that I have had from when I found the one and only source of sugar-free cranberries I have ever seen, about 40mins drive from here.

Apart from that I pretty much followed the recipe, apart from using Macadamia oil instead of olive, and I accidentally added too much vanilla.

They were very yummy, and I ate too many, probably because they are the first muffin, or any other sweet and cake-like thing, that I have had in a very long time! I will freeze the rest so I can't keep eating them till they are all gone! Thanks ABJoe!
