The only place I could find avoid-free cream cheese (for type B) is at Costco. All the cream cheeses in the regular stores wouldn't specify what kind of gum they used- that darn "contains this and/or that" with "this"  being compliant but "that" being an avoid. Even the Philidelphia cream cheese in the supermarket (the same brand I bought at Costco) had the "and/or" in the ingredient label.

So, I now have a 3 lb block of cream cheese in my fridge, with a "best if used by" date 5 months from now. How long will this cream cheese keep once the package is opened? I'm wondering if it's safe to keep it in the fridge, or if I should freeze part of it.

I d freeze it in chunk servings so it doesn t turn bad once thawed.....
cut it up and place in separate zip bags.......guess your son is the only one eating that, right?

My son's the only one eating it on a regular basis, but guests might have some as well.

I'm planning to use up the cream cheese already opened before starting on the new package (even though the opened packages arent' quite as healthy for him) so I think it will be fine a few more days when it's sealed, since the sealed package is supposed to be good for another 5 months.

If I freeze it, I would definitely package it in many small packages, of about 8-12oz each, and thaw them one at a time as needed.

I'm estimating that he eats about 8oz of cream cheese a week, so the 3 lb package will last about 6 weeks.

Freezing cream cheese does change its texture.

For me, the point of cream cheese is the texture -- so I do not like it once it has been frozen.

Basically the water separates out and the rest of it becomes a crumbly unappealing mess.

One can sort of recover it by running the thawed cream cheese through a blender to try to recombine things to the way they were before it was frozen.

The cream cheese is for Ruth's son who is a "B".

I have not eaten cream cheese for a number of years (fresh or frozen), but I still remember it.

I have no interest in trying to figure out my son's genotype until he's almost or completely done growing, and right now he's only 9 years old. I have him on the B diet, which  gives him cream cheese as a neutral.

What I think I'll do is take some of the cream cheese out of the big container and put it into a smaller one. I'll put the big brick of cream cheese, well sealed, in the back of the fridge so it will keep longer. The little package will get taken in and out of the fridge frequently, get spelt bread crumbs in it, etc. But it will only have enough to last about a week, so it should get used up before it spoils.  Then I'll put some more from the big package into a (clean) little one and rewrap the big one and put it in the back of the fridge again.

If the big package spoils before it gets finished, I'll re-evaluate at that time. Or maybe I'll freeze a small block in the beginning and see if my son minds the texture of the thawed cheese.

Ruthie- I've never had sealed never opened cream cheese, spoil in the frig. Before on BTD, I bought cream cheese in November and used, it through the winter, for holiday things, never a problem.

I just opened some that has been in the frig for five weeks, and made truffles, for gifts.

I've used frozen cream cheese, it does get dried out some, but have used it to make cakes etc. and works find. Also works in smoothes. I'd let the juice run off and add a flavorable liquid for the smooth or spead.

That's a good idea.  I've seen cream cheese turn moldy, so the less exposure the large brick gets, the better.



My SWAMI diet is a blend of BTD and GTD Explorer, but I'm not totally compliant.  Also I try to choose foods that have a Low Glycemic index.  DW and DD are A+, probably also Explorer.

I wouldn't be at all concerned if the Costco package had been a multi-pack of smaller packages. I know it keeps for months before opening. I'd probably just buy it in smaller quantities if I could find a compliant variety in any other store (and I may look more closely for that in the future, if I find the big brick doesn't keep well.)

DS wants cream cheese to spread on sandwiches. I can't think of any other way he'd actually consume cream cheese (he's not much of a smoothie person) and I wouldn't bake a cheesecake that only one of us can eat. Goat cheese works beautifully in cheesecakes.

You can mix his compliant herbs and spices in it with compliant cheeses and veggies, and still use as a dip or spread, or added to spaghetti sauce, if he is allowed it.

Hmmm. Melted cream cheese on pasta, instead of making a cream sauce on the stove just for him. That just might work!

But I'll have to skip the "compliant herbs and spices" if I want him to eat it. He's been very much like a "picky toddler" lately, even though my daughters had outgrown that pickiness by age 9. I think the fact that he's the only B in the family, and I often make  food just for him, only compounds the problem.

It works brilliantly, I used to do it, that was one of my quick, easy and cheap meals before BTD.  Also works well with any veg you'd consider serving with a creamy/cheesy sauce or sorts.

Cream cheese melted into pasta works great. He actually likes it, and it's far easier than making a cream sauce on the stove just for him.

Any veggie I used to serve with a creamy/cheesy sauce woudln't be eaten by DS. He loves raw veggies, but not cooked ones.
