hi! I understand that most vinegars are not tolerated by nomads, was wandering does it apply to rice vinegar as well? And also what about rice wine? Im also interested to find out whether foods like kimchi (cabbage soaked in vinegar) will cause problems to type b/nomads? Thanks! |

I love KimChi and naturally fermented Sauerkraut! But until I have the time to start making my own, I only buy a brand that is sold in the refrigerated section of my natural food stores that is unheated, still containing the live cultures. No vinegar is ever used. True KimChi is a naturally cultured food using only vegetables, spices and salt. It is SO delicious!
Rice vinegar and apple cider vinegar appear to be neutrals, since they are not listed in the Genotype book. Sake is most likely neutral also.

I might sound a bit  but really we are speaking about very small ammounts of vinegar  I treat apple cider vinegar as a neutral- I use it fairly often. I do use some white wine vinegar at times or some balsamico as well- it is * dot for me- never had an reaction to it. In salad dressings lemonjuice is rather nice |

a. You're not a Nomad. b. You're not type B. c. Mirin isn't vinegar. I'm just trying to figure out why you're bumping up a 2-years-fallow thread called "Type B/Nomad -- Vinegar?" to talk about mirin and your Type O/Hunter reaction thereto. |

I answered this post ^^, but I want to add something. I would caution everyone against the practice of blaming symptoms automatically on having ingested some particular ingredient a few hours before the symptom's manifesting. A person with pneumonia coughs - NOT because he ate a certain food before coughing, but because he has a medical condition that causes him to cough. A person who has lost a certain neurological faculty has some condition that has caused it - has had a stroke, perhaps, has a lesion compressing a vital nerve, maybe... There's a broad differential field that diagnosis must comprise. Waking up at three in the morning with intense joint pain can be a sign of serious disease that has nothing whatsoever to do with what BluesSinger had for dinner. Or not. But that's all that the post considers, and I'm suggesting that that's just not the place to go for answers in many, many, many cases. Nor does this help BluesSinger to tweak the diet, because s/he may be erasing from the pantry a perfectly innocuous ingredient, time and again. |

I'm of the understanding that "vinegar, all types" includes ALL types of vinegar, even those not specifically mentioned. Apple cider vinegar has its own rating, and is tolerated by more people.
That said, I'm not always strict about my vinegar intake, if it's fermented from something that's OK for me to begin with. I figure rice wine vinegar has to be healthier for me than distilled vinegar made from wheat or potatoes. But I still think of those small amounts of vinegar as "cheating". It's something I try not to do.
I had a fairly large amount of rice vinegar in the house when I started BTD. I finished it up, but haven't bought any more. I've been using ume plum vinegar instead- while it has the name "vinegar" in it, it's actually a brine. It's a "beneficial" on my personalized SWAMI food list, while all other vinegars are listed as "avoid."
We're all unique individuals, and we react differently to different avoids. I can handle small amounts of "avoid" oils and vinegars, but react strongly to even trace amounts of wheat or potato. Others get horrible pain from vinegar and/or oils they're not supposed to have. Ideally, you want to eat completely "clean" for about a month and then test small amounts of these other foods to see how you personally respond. A bottle of vinegar has a long shelf life, so if you leave it alone for a month it won't spoil.
Rice wine is unlisted altogether. Since Nomads can have rice, and some forms of alcohol (such as beer and grape wine) then it's logical that mirin would be OK too- but I suggest not trying it during your month of "clean eating". For sake, I'd follow the listing for "distilled alcohol." |

I am of Korean descent and as Victoria pointed out, kimchi is cultured. I do not know of ANY real Korean kimchi that is soaked in vinegar!
