I cut one up this morning and it wasn't quite as ripe as I would've liked.  I should've waited.  However, it still went down well, tasted almost as good as the other, and seemed to be almost ripe.  But the top is a little hard.  And the edges.  I fried mine in coconut oil too, to help it be a little softer.  And I put the rest in a container in the fridge.  I have no clue if it will ripen any more.

I didn't think so.  I might have to stick to cooking this stuff.  Is that bad?  A little frying gets it soft.  It's probably not the optimal way to eat it, but it still sat good in my tummy.
