HI All,

I've searched the recipe centre but did not find any recipe to have some sort of compliant butter spread.

Knowing all your clever heads out there, surely lots of  you have something to spread on their (compliant) breads ?

There's honey butter spread recipe which seems to go into the right direction, but I'm looking for a savoury version of it.

You can also try peanut butter, almond butter, etc. If you're not crazy about the taste of  ghee, try blending some seasonings into the ghee before spreading it. Salt definitely, and maybe onion powder, garlic powder, parsley, nutritional yeast- get creative and see what you enjoy.

Another option is to mix ghee and olive oil about half and half, add any compliant spices to taste and refrigerate to get a "spreadable" texture...

Ghee certainly tastes DIFFERENT from butter. I get ghee as a superfood and butter as neutral, so I mostly use ghee- but there are times when butter just works/tastes better than ghee. Ghee has a much milder flavor while butter is a bit "cheesier." For somebody who's been eating butter for years and has just tried ghee for the first time, I can understand the disappointment in the flavor.

You can sprinkle some sea salt on the ghee to make it seem more like butter.  Frankly, I don't bother with bread anymore so I don't need a spread.


My SWAMI diet is a blend of BTD and GTD Explorer, but I'm not totally compliant.  Also I try to choose foods that have a Low Glycemic index.  DW and DD are A+, probably also Explorer.

Ghee's flavor is only as good as the quality of the butter you've used to make it. .  If you wish to add sea salt, refrigerate and then use it as a spread, I really don't see much of a difference between the taste of ghee and butter.  But combining  ghee with a high quality olive oil might appeal to you more.  Maybe stir in some honey to the ghee before it fully cools....refrigerate and see if that tastes better.

You could try adding herbs and seasonings to the ghee and make a flavored butter spread.

What about the flavor of ghee offends you?  Ghee is nothing but clarified butter.....the oil remains
while the dairy solids are removed.  I have had people say the smell reminds them of puke....but
I still think it's the quality of the butter that was used.

Definitely. And the quality of butter is really all over the place. I think this might be at least part of the problem.

I think well-made ghee smells like fresh popcorn and tastes much milder than butter.  Make it yourself with a good organic butter like Straus or Organic Valley Pasture butter.

I have to agree thae ghee isn't really a substitute for butter on a bagel, or toast, or whatever - it just doesn't taste right. I've tried coconut oil - just a very thin spread of it - with a touch of salt, and it's wonderful

Decades ago, during my macrobiotic days, I ate no dairy at all. I never thought about butter, nor was bread a usual part of my diet.
I did become proficient, however, in making different sauces and spreads that used miso. It has a wonderful, rich, fermented flavor that combines well with other ingredients such as sesame tahini, for instance. I would think it might mate well with ghee, too - Try adding a touch of miso to some ghee - see if that doesn't give it the depth (and salt) and richness you're craving from a spread.

If you're unfamiliar with miso, it comes in a variety of colors/"flavors"/ strengths, made from different grains, for instance. I'd try a light miso with ghee - white or yellow miso. Or, for a richer flavor, maybe "brown rice miso".

I love ghee spread on a piece of toast! To each, her own! But I will mention that I have never liked the taste of butter and didn't eat it for most of my life.

I guess I'm not the only one who doesn't like ghee that much. I guess my taste buds are too sensitive & I do detect the undertone taste.  But ghee is OK mixed with other things. The ideas shared here sound good & I may try to make it again! I probably used unsalted butter.

ghee somehow smells like rancid butter to me, which is why I never thought of eating it uncooked.

How do I do it myself?

Anyway mixing it with olive oil is quite an idea!

I imagine the aroma of the ghee would suggest the quality of the butter. The unclarified butter may be hiding some of the rancidity. Tolerable as butter, but not as ghee?

Here's a website with pictures. Very helpful. Cook it on low, though, and take your time. Fast ghee is burned ghee. I also agree with Victoria's brand recommendation of Organic Valley. Some people insist it be unsalted, others don't, but I would recommend unsalted so you can control that aspect yourself.

Ghee needs to be made with unsalted butter.  And as others have stated, you need to use very high quality organic butter.

It is fine to add a bit of salt after you make your ghee, but I wouldn't add it to the pot of ghee itself.  I always sprinkle a tiny bit of sea salt on top of "ghee'd" toast or veggies and feel it brings out the butter taste big time.  

Each of us has our own unique taste perceptions and sensitivities, so take this as being my personal experience:  To me (and my A nonnie husband agrees with this) our homemade ghee tastes like butter x 10.  We both love it.    


Almost 6 years on ER BTD, went from sick and dying to healthier And 30 pounds slimmer.  

Dec 30 2013: Just started Swami Xpress - after fine tuning the information, it shows 48% Explorer and gave me a hybridized Explorer/BTD list. A new adventure for this old lady!
