Veggies are pretty easy for me. Maybe it comes naturally after so many years of being vegetarian. A meal just seems incomplete without plenty of veggies.
Many of my meals involve sauteed/stir-fried vegetables. I heat up some oil and add any or all of the following in roughly this order, chopping each into small pieces and stirring as I go along: onions, garlic, sweet potato or yams, red peppers, winter squash, carrots, broccoli, celery, zucchini, greens, maybe some herbs. Whatever is added first cooks longer -- that's the idea. Along the way I add a dash of liquid and cover to help steam the veggies. (I'm partial to soy sauce but it's forbidden, so lately I've been substituting a mixture of molasses, water, and celtic sea salt.) Add a favorite protein source and brown rice, and I call it a meal.
