I am dealing with excess lemon harvest and I wonder if in this wonderful community there are any wine making people ... I am looking to do it the artisan way ... no preservatives, natural yeasts, acids, or whatever wine making requires ... I insist in getting organic wines when I buy, so I want to walk the talk and try my hand a producing wine naturally ... Any body any hints or tips? |

There are probably web forums dedicated to home brewing. I'd look for one of those, to get the experience of people with years of messing around with ferments, even if they're not on BTD, rather than rely just on fellow BTDers who are also new at this. |

I searched and searched and did not see this one!!! I could adapt this, but the special equipment is the problem at the moment ... (need it now!!!!)
Balloon wine is supposed to be easy. I haven't tried it, though. Here's one link; there are others. http://www.easy-wine.net/homemade-balloon-wine.htm
Oh!!! WOW!!! ... I could have lots of fun with this one!!! It gave me some ideas!!!! Thank you both so much!!! I knew I could count on this community for the right inspiration ... Guess what I will be busy doing the next day or two ... |

Cristina, Wine sounds lovely ...but another thought if you drink lemon water. My Mom has an abundance of meyer lemons annualy and she squeezes the juice into ice cube trays! So handy for drinks, soups, or cooking all year round! |

I wonder how hard it is to make mead? And if it would at all work with agave instead of honey for us O nonnies who shouldn't have honey?
I had mead once, a friend's home brew, and it was absolutely delicious. That was more than 20 years ago- I wonder if I'd like it as much now? |

Also: What the Moroccans do with their lemon harvest "overage": A lovely article, with recipe: http://www.davidlebovitz.com/2006/12/moroccan-preser-1/This one is by a world expert on the region's cuisine and produce: http://www.epicurious.com/recipes/food/views/Preserved-Lemons-231570A youtube showing the simple concept and execution: How to cut, salt, and pack the lemons to preserve them. You can add all sorts of herbs/spices, too. Very easy. http://www.youtube.com/watch?v=ApblfnsB5pEOkay - back to the Wine Project... PS. But wait, first, check out the Lemon Pickle video, if you go for Indian food. Stick with the whole (short) video, so he can share with you a number of variations. http://www.youtube.com/watch?v=yvJx_Nn6fXc |
