oh, my, I know!!!! I am a dairy freak!!!!! I try to minimize it.
had lunch out...chose well: a salad with turkey pcs. and papaya over romaine plus a tall drink. one shot of gin in soda water (no sugar) with lime. Refreshing and I don't regret it. never even felt the gin.

I told my husband I was going to go to the store to get some raw almonds so I could make almond flour with the coffee grinder.  He told me it wouldn't work because the almond flour would be too fatty. I'd be making almond BUTTER and gumm up the grinder.  

I of course, didn't believe him.  So I tried grinding some walnuts in the small, washable coffee grinder.  Shore-nuff, I started to get something that was kinda pastie.

So I went to Whole Foods and picked up a bag of Bob's Red Mill Almond Meal.

I used jayneeo's recipe as a guide.  I knew I wouldn't be satisfied with 1/2 cup of flour so, not really knowing "anything" about baking and cooking I made my own recipe.

3/4 cup almond flour
2 jumbo eggs
1 Tbsp butter
dash of salt
1/2 tsp vanilla  (GATHERER BLACK DOT!)

I blended up the ingredients in a bowl and plopped batter down in my pan with rice bran oil.

I made all the batter into 3" size pancakes.

I then slathered them with butter and probably too much agave syrup.

It wasn't like eating a "pancake." It was like eating a fried almond cookie.   I won't be doing THAT again, lol!

I am not that far from West Hollywood at all.  It's just a drive over the Hollywood Hills. About 20-25 minutes, which is a fast drive in LA.

well, its not exactly like a pancake, you see. But...I have heard (via Elana's Pantry, an awesome blog) that there is a finer grade of almond flour that is better.
And I wasn't really against feeling the gin...it just didn't happen: blame the bartender.

For me, it was too much nuts, too much fat, too much sweet, too much indulgence.  Maybe as a treat in a month or two, AFTER I start that program....

Walking through Whole Foods...I started to crave some of my favorites... the gluten free cookies.....the mouchi rice cakes.... the puffed rice snacks.... the terra chips,  Amy's rice crust , the Soy Dream frozen bars, that overly expensive 365 brand of organic almond butter......  the super expensive Lake Champlain chocolate.... I got out of there as fast as I could    because it would have been a

this a.m.: 1 egg, half a zucchini, sliced thin, bit of goat cheese (chevre) and turkey sausage patty, fried in ghee. mmm.
(let's see, last night DH grilled a small hangar steak for each of us, which I had w/lettuces and tomatoes. Later, walnuts.)

let's see, lunch was fresh mozzarella cheese with tomatoes, and 2 grassfed beef hot dogs.

KK here, day 36 in my grain-free cell.

It's not really being "in jail" but it does present some challenges during carb-craving times.

Breakfast is fried turkey patties, and a stir-fry mix of sweet-potato & red pepper (in rice bran oil, our main cooking oil) that Lewis is fixing up right now.  We need to get back to an earlier rise and bed time frame.  It's hard when I'm late into the night. Kinda stuck on one project right now.
