I wouldn't want to use that second version. I don't want to be limited by eating specific foods at specific times, or go nuts trying to figure out if the celery I just ate was part of lunch or a snack all by itself. If I've had a crazy week, I want to look at the chart and say "Oh, I didn't have enough red meat yet this week but I've eaten all my fish. I guess I'll have meatballs for lunch rather than sardines."
Well, that is why both ideas are good
. However, you can always rearrange foods inside a day, and even between days of the week. The laid out weekly menu, however, helps so you don't accidentally eat too much food in one day and have none left the rest of the week.
