Two more foods I'm wondering about: potato starch and beet kvass.

Potato starch may not have the same rating as whole potatoes because it doesn't have any proteins or fats in it. I doubt it's a wholesome food, but I would like to know if it's a complete avoid, as whole potatoes are, or if it's a neutral or a black dot (meaning that I could safely consume it during Passover when we use potato starch in so many baked goods.)

Beet kvass probably has a very different rating than whole beets- it's fermented, it has probiotics in it, and it doesn't have the fiber and it's probably much lower in carbs as well. The beet kvass is made by coursly chopping beets, adding salt water, letting it ferment  about 3 days, and then drinking the liquid (which turns  bright pink.)
