Can anyone help me with frosting for a cake, and a filling for a layer cake, suitable for an O-nonnie. That means no dairy except ghee and eggs, and the only sweeteners allowed are molasses, vegetable glycerine and agave nectar.

I've done the cocoa powder and agave nectar, with great success, but in this instance I don't want chocolate. I want something to replace butter icing. Something white-ish and creamy-ish. Something that will go with all-fruit jam (jelly) as a filling, and/or look pretty on top.

I've been experimenting with mayonnaise, thinking that it's only egg, lemon juice, mustard and oil - I should be able to tweak it so that it tastes sweet, right? Nope. As soon as I left the mustard out, it only just emulsified, and when I added agave it immediately turned to liquid. Doh.

Help?

Egg whites beaten up would go nice & white & frosted looking but you need to maybe use a  powder sweetener Or can you drizzle a little agave or veg glycerine in as you beat?  That may work for the filling or the top, or both??!!
Or I wonder if you could beat butter till creamy (can you use that in place of ghee?) with some veg glycerine?

How about Stevia?  Sorry, I don't know if that's O-nonnie compliant or not, just thinking about powdered sweeteners.  Never tried it either, just might be worth investigation.

Ghee or coconut oil as the base?  I believe India Tree has some nice food based colorings.

I've successfully made my own 'icing sugar' by grinding 1 cup of zylitol with 2 teaspoons of arrowroot powder.  Store this in an airtight container and use as per regular icing sugar.  It makes great butter icing!

I've used xylitol chewing gum and candy, but I always eat tiny portions (and instruct my kids to do the same) becauce I'm worried about too much xylitol causing gas and bloating. Does the xylitol frosting cause any GI upset?

Some people are more sensitive to sugar alcohols than others.  I don't seem to have a problem but I know a LOT of people who do.

If you can have other sweeteners, mixing them may work really well to bring up the sweetness level without using additional sugar alcohols AND without compromising taste.

Ruthie, no I don't have any adverse side-effects from the xylitol.  Using for frosting in the way I mentioned above is one of the very few ways I use this sugar (and as such it's really only a treat), the other way being the occasional piece of dairy free, dark chocolate I buy.

Andy that is such a good idea Do you cook it at all? A lot of icing sugar mixes have arrowroot in them...

I used to get dreadful clear the room gas, with 1 or 2 spoonfuls of xylitol or a xylitol mint would go straight through me... A year later I find I can eat a couple of mints with no ill effect Thought it might be due to gut healing Have yet to find my powdered xylitol (Someone hid it - not sure if it was me or DH )

'Fraid it is avoid for O nonnies & I don't think it would work for icing, as you'd need a reasonable amount of whatever powder you chose... which would be impossible with stevia as it gets bitter the more you use

I'm surprised that xylitol, or other sugar alcohols, would be ok on GTD/BTD plans.  Thought they were, as a class, no-no's.  Still learning!

I'm sorry, but if I hadn't wasted a lot of time searching already, I wouldn't have posted the question. If there is anything suitable in the Recipe database which is O-nonnie compliant then I couldn't find it. And I couldn't see anything in any older posts except, as I said, cocoa-based ideas. Your searching skills surpass mine entirely Lola - maybe you could link me up to some of these "plenty of ideas"?

Thank you for all your other ideas folks. The immediate requirement has passed, but there will be others so I'll keep playing.

Xylitol and Stevia are avoids unfortunately. I put my only options for sweeteners in the original post - they don't give much room for manoeuvre!

Butter or egg white beaten with agave is a definite possibility though. Has anyone tried this with success? Do they blend properly?

I bet fruit jam would work as a frosting as well, either the same kind used as the filling or a different flavor.

I may play around with egg whites and agave in the future- if I get any good results I'll post the recipe(s).
