hi guys, i have a doubt about pumpkin seeds...
how much and how many times do you eat them?
do you usually mix them with flax seeds or is it better to eat them in different times?

Hi santina, I'm not an expert on pumpkin seeds but I do eat them. (:

This is how I prepare them:
  • Only use raw, unroasted pumpkin seeds (aka pepitas)
  • Soak seeds in glass jar with salt water for 24 hours, with enough water to cover again by about one-third (I put jar in sunlight to warm water)
  • Drain and rinse seeds
  • Dry seeds in food dehydrator, or in single layer on cookie sheet in conventional oven on lowest temperature with oven door cracked open while drying, until crisp/crunchy
  • Store in glass or plastic jar in refrigerator (to maintain freshness of plant oil) with a few grains of white rice (to reduce moisture ... only thing I've found for which white rice is any good)

As for usage, I'll mix them with flax seeds prepared the same as above and put a small handful of them in a green salad. Oftentimes, I'll add a tablespoon or two of them to some dried berries, walnuts and cacao nibs to take on a bike ride. And, sometimes, I'll just grab a handful to eat plain. Hope this helps. (:

Edit: I also make large enough batches to last for a week or two, so that I'm not preparing them very often.

For a wintery, hearty taste to my vegetarian lentils, I used to buy them hulled and toasted and boil them along with the legumes.....gives a nice deep flavor.

You could bake em in a bread....

I do not know if they are on my SWAMI now.
