If you've ever seen it being made, you'll know why it tasts moldy. There is growing on the surface, a big, hard slab of slimy growth.  It is living micro-organisms. It gets bigger and thicker and then finishes growing and digesting the sugars in the brew. Then you remove it and drink the liquid. No, actually, I'm being a bit judgemental (in an only partly serious way)  It should not taste moldy. It does taste a bit like vinegar, a bit alcoholic and a little fermented. Sometimes it will be a bit carbonated. (can't stand the stuff) But many of my friends (and family) swear by it. I'm afraid the acidity will leach the calcium out of teeth. Also afraid of wild bacteria strains getting started in the brew and establishing themselves in the gut. |

It looks that way too, Pat! When I see those "batches" brewing in a corner of my livingroom, behind the t.v., growing bigger and bigger, I feel like something is going to crawl out of those jars and eat the city I live in. |

NO I'm not making this stuff!!
But one of my family members is really into it, and making it. I watch the process. I tasted it. I tried it 15 years ago also, when it first hit town. I felt the same way about it then as I do now. There is absolutely no attraction. |
