I guess it is that time of year because women around me at work keep talking about the cookies...

I found this - aside from coconut flour it looks okay for an O. Let me know if I'm wrong. I think I'll use rice flour in place of coconut flour.

I went on a rip today and stocked up on homemade chocolates. Chocolate covered cherries, almond butter cups, black walnut bark.

1 piece after dinner. If I can do it, anyone can! If you can be compliant and exercise control, you are 100% successful. Good results will follow.

Tell the sweet little Girl Scout that you're allergic to her cookies and offer to make a donation to Girl Scouts in lieu of buying cookies.

Then bake these. Since it only calls for 1 teaspoon of coconut flour, I think it would be find to simply omit it. And I agree about using butter or ghee (or coconut oil, if it's OK for you) instead of the vegan shortening.

Actually, it's the chocolate in this recipe that's toxic for me.  Otherwise, looks good.  A small amount of coconut flour probably can be omitted and just sub with more almond flour.

This is a total segue but my daughter in law made blondies last night for my granddaughter's b'day
dinner.  The recipe is almost mind boggling because it has no flour whatsoever...

It was 1 cup of nut butter (she used creamy peanut butter)
1 egg
1/2 tsp of baking soda (or was it baking powder....don't remember)
1/3 cup of honey
1/2 cup of chocolate chips

Beat egg, add other ingredients....Bake in an 8x 8 pan

I'm not sure of temperature or time.  I'm thinking 325-350 about 25 minutes.

Anyway, you would not believe this recipe had no flour.  It was light and fluffy and delicious.
Not at all sweet.  Not sure agave would work...Might be too watery. Molasses might work...
or any combination of compliant sweeteners that don't water down the batter..  6 of us ate the entire batch....still when you divide all these ingredients amongst 6 people and realize that we shared one egg and 1 cup of nut butter, 1/3 cup of honey and 1/2 cup of chocolate chips....not so
bad, right?  Maybe a little too much nut butter per person.  Actually I only ate one square...
Grandson ate most of the pieces.  He's 14, thin....still growing....He can use the calories!

Chloe, that recipe is very similar to the almond butter blondies recipe that I make that I got from Elana's Pantry.  That one uses agave, almond butter, chocolate chips, sea salt, etc.  Google almond butter blondies or Elanaspantry almond butter brownies. Super recipes and very easy.

This is what my wife and I have been doing for a few years now. Print out and attach a check that says "contribution only" on the note line. Give it to the girls specifically so they get credit for their troop.

thanks that will give me baking time and temperature.  I'm thinking DIL might have gotten this
recipe from Elena's Pantry. Always baking gluten free....uses that site often.

PS Nope....not from Elena's Pantry...just found DIL's recipe here

Many years ago I used to make peanut butter cookies with a very similar 1,1,1,1 recipe:
1 cup peanut butter
1 egg
1 cup sugar
1 tsp vanilla

Mix.  Make into balls, flatten with fork dipped in sugar, bake.  

Nice to know I could make them again using honey in place of the sugar - or I could make the blondies.  My hubby would think he died and went straight to heaven if I made those peanut butter choc chip blondies for him!  


6 years on ER BTD, went from sick and dying to healthier And 30 pounds slimmer.

I've made this exact recipe many times.....the paleo diet version is to use Splenda, although not something I'd ever consider.  I have used powdered agave which I bought from nuts.com and
it requires the baking temperature be lowered by 25 degrees as the cookies burn easily.

It amazes me how you can totally leave out any type of flour and still wind up with a baked good
that tastes like it contains flour.  It's magical!

If you don't mind eating non organic peanuts, Larabar Peanutbutter Cookie Bar is made from just dates and peanuts........and tastes like - yep!  Peanutbutter cookies!

The other problem with Larabar is that they are owned by General Mills which is a really big money contributor to the anti GMO labeling "lie through your teeth" campaigns that have defeated GMO labeling laws in 2 states so far.  

I used to have the Larabars on my subscribe and save items from Amazon.  Key word:  Used to.

I have been making those peanut butter cookies for years....
sometimes I use raw turbinado sugar, sometimes honey...but no vanilla
Just 1 egg, 1 cup peanut butter and 1 cup of sugar....
I do lightly sprinkle raw sugar across the tops for a bit of crunch...

I used to double the recipe and use a whole jar (18 ounce) of peanut butter with 2 eggs and 2 cups sugar, since measuring peanut butter is messy. I never used vanilla in mine.

Clearly, that was pre-BTD.

I dont' like the political alliances the Girl Scouts headquarters have made, and imposed, via-a-vis "education" by WAGGS at Girl Scout Conventions.To me it is a situation involving "2 kinds of avoids" now, "food and politics".I am neither inclined to buy the cookies, or give a donation, in this instance, as sorry as I am.

Yes, it wasn't that article but some other with the photo at the convention. Looks like someone did some deliberate misleading in this case eh

True in some sense, but it does work both sides of the isle. Wherever embellished "news", mythology, hysterical exaggeration and outright fabrication leads it. As in the case with the accusations against the Girl Scouts.
