Has anyone tackled this wonderful cake to make it compliant?    It's almost there.. just needs a couple of adjustments on the flour and sugar ingredients!

I was under the impression that olive oil is best not heated to high temperatures. If I made this cake, I would use rice bran oil which is a diamond for me (so is olive oil). The flavour is delicate and quite neutral and can handle high heat. A glaze can be made with lemon juice and compliant sweetener if one cannot use rum. Not sure if rum is gluten-free.

Use an extract like rum, almond, vanilla or even a fruit flavor like pineapple.  And pineapple juice instead of
the lemon juice.  Although maybe cut down on a sweetener a bit...Lemon juice is sour and pineapple juice
is sweet.

well that is alot of extract!   I'm thinking vanilla?  but 1/4 cup?!    I"m thinking I'll do 1/8 cup lemon mixed with 1/8 cup pineapple.. sound workable?  

also I have a gluten free organic mixture for the flour now.  

HA!!! - I can't believe I wrote this original post in 2013 and have been carrying round the recipe all this time!

Pineapple juice, plus a splash of any flavor extract of your choice is kind of what I was
talking about..I got confused because you asked for a juice substitute.......I didn't know you could use lemon juice...I thought you wanted a substitute for lemon....

so yes, pineapple juice plus lemon juice would be fine....you don't really need the extract....but vanilla would go fine in this cake if you want to use 1/2 tsp to 1 tsp.

cake.....I have an oven, and I am going to eat it all!
I have millet and rice flour at home.
almond flour is pretty expensive and just as heavy as rice flour; I still have a shot at this!

Anyway,  I just checked the recipe & it has sugar. Coconut is an avoid for me, so I doubt the coconut sugar would work if I could even find it!
But I'm glad there is sonething many of you can enjoy!!! Bon Appetit! Of course, mine is too "Bon" so it's better that I can't even have the first bite!!!!
