So what if I take the almond/walnut meal from making nut milk and mix it in with some agave, cinnamon, vanilla and eggs, form into cookies and bake?  Would that work?  do i need to add anything else?  Oil?  baking powder/soda?

add a compliant flour to the mix and egg to help bind together


check out cookie recipes here using almond flour.....add some baking soda

Seems like it's worth a try.

Here's a youtube video.....but she dehydrated her pulp first and added ingredients you might not
wish to use.

A nut butter might help with moisture.

have the time right now to search further.

I've found that the leftover pulp from nut milk is very dry and bland. Freshly ground nut meal  gives far tastier cookies. I've used the leftover pulp for cookies and cakes during Passover, when I don't have any flours I can use to give texture to baked goods. I have to add a lot of oil, though, to replace what the nuts usually have.
