Anyone got a recipe for a Sami's like chocolate chip cookie recipe. It looks simple and tasty:

I do know that people often have difficulty trying to reproduce Sami's products baking on their own.

This is even more true of their bread products than the cookies.

I'd substitute ghee for the butter.  There are lots of good cookie recipes on elanaspantry.com  She uses a lot of almond flour and almond butter recipes. I've played with the brownie recipes made from almond butter and they are delicious.  I like to undercook them a bit so they are chewy and I add extra dark chocolate chips.

my cookie dough recipe is 1.5C brown rice flour, 1.5 C teff flour, 1 c golden flaxmeal and 1C brown flaxmeal and 4tsp baking soda. then add in whatever else sounds good (bananas, walnuts, cinnamon, 60% chocolate chips, pumpkin) plus 1 stick unsalted butter (or ghee) and 1 egg. bake at 350 for about 12-15 mins

The reason is that Sami's is a very unethical company that I believe lies about their ingredients on their ingredients list.  At a certain point in time, they started listing "cultured corn syrup" on the labels of some of their products, when they had not listed it before.  Perhaps they just started putting the corn syrup in at that point, but I'm highly dubious because preservatives were found to be in some of their products when the products were independently tested, though no preservatives were listed on the label.  Stay far away from Sami's.  There is an old thread in the archives* going into lots of detail on this, so I won't duplicate that in this thread.  Anyone interested can search under "Sami's" (be sure to change the date range to much longer than the 30 days it defaults to).  But, to bottom line it:  the reason it can't be duplicated is because the ingredients they actually use are not as listed.
