http://www.food.com/recipe/homemade-cranberry-juice-167817Noticed lots of cranberry's for sale in the supermarket so might be worth buying some and having a go, perhaps freezing a load if prices are low. 1 lb fresh cranberries or 1 lb frozen cranberries 1 quart water sugar I will be omitting this stage of course! Directions: 1 Wash and drain fresh or frozen red-ripe cranberries. 2 Combine cranberries and water in a large pan. 3 Bring to a boil. 4 Reduce heat and cook until berries burst. 5 Strain juice through a fine strainer lined with cheese cloth. 6 Sugar can be added to juice to your taste. 7 Reheat juice until it is almost, but not boiling. 8 Pour into jars. 9 Allow to cool before refrigerating. |

Cranberry are fairly cheap this time of year. I usually get several bags and freeze them. They are a diamond and the #1 geno-harmonic foods on my swami. Once they're gone we can only get canned (sugared) sauces or dried. I can get the juice, one without sugar etc. at $10.50 US (one qt.) I drink about 3oz each morning and have notice WH puts some in his frozen yogurt at night now.  If I had the freezer space I'd get much more and make my own juice. Enjoy your juice. The recipe works okay but is a bit wasteful.
I worked the pulp round the sieve with a spoon and basically got double the amount of juice when I added more water and brought to the boil again and then re sieved.
tastes all right without sweetener too
questions.
what can I do with the remaining pulp.
are the little black seeds any use? they taste all right.
I do hate to waste stuff lol

We love eating cranberry sauce all year round, so I have no need to look for cranberry recipes. I want to stock up so I can make cranberry sauce all year round!
I wouldn't say that cranberries are "cheap" this time of year, but this IS the only time of year they're even available. I wanted to stock up on cranberries from Costco, but I had to throw out 2 huge bags (one partially used) when we lost power for 9 days. Costco no longer has any cranberries, but the local supermarkets do. So far I've bought 8 bags (enough to make 8 batches of cranberry sauce, so enough for 8 weeks) and I'm hoping to buy more. I have one in the fridge to make this Friday night and 7 in the basement freezer. |

I like the way my Grandmere used to make a simple sauce. 12 ounces fresh cranberries one lemon, including peel, cut in quarters [used to be with an orange  ] 1/2 cup raw sugar (or honey/ compliant sweetener) 1/2 teaspoon sea salt 2 Tablespoons minced fresh mint Combine first four ingredients in food processor or blender...coarsely ground Add mint and pulse gently just to combine cover and refrigerate...let flavors meld |

I just boil 12 oz cranberries with 1.5 cups of pineapple juice. Sometimes I add some agave after cooking, sometimes not. This works well with juice concentrate as well, but I can't find pineapple juice concentrate without added vitamin C (corn.) |
