Can someone tell me why the quinoa muffins do not have any eggs in the recipe? Eggs add structure. I added one egg and it worked fine. Tasted fine too. Are these recipes tested?
One contributor can't have eggs so her recipes don't have eggs. (also milk if I remember correctly) I've often found you can add the egg (s) and the recipe will work just find, but it's good to know that it will work without.
