Whiskey Glazed Sweet Potatos
4 large sweet potatos or about 3 lbs 1 cup pecans 4 tablespoons unsalted butter plus more to grease the pn 1/2 cup agave nectar(amber color) 1/2 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp cayenne pepper 1/4 cup whiskey kosher salt 3 crisp apples, peeled, cored, halved and cut into 1/2inch slices preheat oven to 375F, bake sweet potatos on a cookie sheet about 30 to 40 minutes Toast pecans in a sautee pan 3 minutes, add agaveand spices. Let simmer 5 minutes and add whiskey and 1/2 tsp salt then simmer another 5 minutes. butter a 8 inch by 8 inch casserole pan. Peel the sweet potatos and cut into 1/2 inch slices. Alternate sweet potato and apple layers. Pour the sauce mixture over the top and bake covered with aluminum foil for 15 minutes. uncover and baste with the juices and bake uncovered another 18 minutes.
Substitute according to your type or don't if you are feeling wicked. It just said whiskey and it wasn't specific as to the type. In the USA that usually means bourbon. |

I used to do something similar with pineapple juice and brown sugar long ago. Maybe pineapple juice and stevia for the A's? |

Oh, dear. Dear oh dear. It's what you serve at the end of Thanksgiving dinner, when everyone is choosing between pecan pie and pumpkin pie and apple pie: It's a sort of amalgam of the three. The best of all worlds. Dear me. Haagen-Dasz Vanilla over the top. Wait at least 8 hours before checking your glucose. Sounds positively delicious! Make sure there's just a touch of salt in the pecans - you'll see.  Serve with a tea that has plenty of lemon in it. |
