I have been making something like that and it is a perfect accompaniment to tuna salad / salad nicoise. How good is horseradish?! I wish I could buy fresh to plant and grow - only jar stuff avail here

Heneybee it is pretty simple to grow-at least in temperate climate I have it almost as a weed in my graden

I love horseradish. I'm concerned about the proposed addition of chilies or flaked chilies, however - ingredients I also love. Competition, confusion for the taste buds, not to mention sinuses. I'd think you want to allow the diner to really savor the horseradish, and yes: A little sweetener does bring it out beautifully, proportionate to what you're serving the dressing OVER.

My most used book "Fresh Ideas for Vegetable Cooking" by Georgia Machala Massie. I highly recommend this book with the proviso that you do of course have to modify the recipes according to your type.
Several recipes I've posted on here are modified versions from this book, including some that are now in recipebase. If it grows in the garden(and isn't a fruit) they have several recipes for it. As far as the pepper, they say fresh ground black pepper to taste. I'm trying to give options.
I spent the day at the Gulfcoast Eggfest(avoid city) but the grilled pineapple was great, just sugar and cinnamon.
Great, GCG. Just looked up the cookbook. Through Amazon, you can get a used copy for 36¢!
BTW, I'd say Drop the black pepper rather than substitute for it, if it's an avoid for you.

As far as the Eggfest I've never seen so many bacon wrapped appetizers: bacon wrapped pickled watermelon rind(I admit I sinned with that one), bacon wrapped dates, the standard jalapenos stuffed with cheese and sausage and wrapped in bacon, and the ultimate Nomad kryptonite was bacon wraped chicken with jalapeno slivers. There was turkey and flat iron steak. the decoration prize was taken by a guy who took about a two pound bologna, cut it into 7 slices, grilled them, assembled them in a cake with an icing made of sour cream and cream cheese with chives then wrote 3rd Annual Gulfcoast Eggfest on top.
