I am trying to make my own granola / trail mix bars so I don't have to buy them at the store.  But I ned something to make it stick together other then corn syrup.  The nuts, seeds, etc. will stay together in the cold, but comes apart whenit warms.

Any suggestions?

As an O Explorer, I get all of the above on my SWAMI, the honey is the diamond and the other along with molasses are super-beneficial. I'm interested in such a bar, if you don't mind, please post your exploits! If you get lecithin granules, that would help as well once they react with a bit of warm water.

Thanks for the suggestions.  

I understand that the agave, molases, etc. will serve as sweetners, but will they also help to hold the bar together so it doesn't come apart?

So far it is good in taste & BTD friendly, but I am having trouble with it keeping it's shape as a bar.  My goal is to have it shaped like a bar rather than loose trail mix.

Will this help?

I don't know which dried fruits you can have, but they would serve to sweeten and hold the whole thing together, too, if they are ground up. Sometimes I buy bars when I'm out that are nothing but ground up fruit, seeds and nuts. Delicious too!

You can add an egg and some extra flour of some sort (oat flour?), press it into a greased baking dish, and then bake it till it's dried out some.

Yes, any liquid sweetener will hold it together in a bar the way that corn syrup does.  The only thing I'm not sure about is exactly how quickly corn syrup hardens up when heated, as I've never experimented with it in my kitchen. It's possible that you'll need to bake for longer, or at a higher heat, to get the bars to hold together with an alternative sweetener.

I don't reccomend using blackstrap molasses as your only sweetener in the recipe, as it has a very strong flavor that's almost bitter at times. Unless you like that strong, dark flavor in your granola bars, you're better off mixing blackstrap molasses with other sweeteners or using a milder molasses instead.

If you're allowed cane sugar, you can boil together sugar (white and/or brown) and water to make a syrup. 1 cup sugar plus one cup water makes about 12oz of syrup.

I was wondering the same thing, as there was a show on tv a couple weeks ago that dealt with candy, and some of them had corn syrup.
