This is a recipe off this site and I found them to be very light and good.  I ate four though.  I should know better than to bake when I am hungry.  It was my very first time using spelt and it is a winner in my book.

Thanks for sharing that.
Y'know - the Recipe Center offers us the opportunity to rate each recipe right there on the Recipe page itself - maybe you did that - but I also really appreciate that you came back here to the Forum and gave us the heads up and hope others will similarly rave to us about really good recipes.

Sounds awesome....thanks for sharing a recipe you tried and loved, Christine....

I have to cut it in half....24 muffins is a lot because I usually bake and freeze.  Freezer space
is getting tight.  But also, don't want to waste 4 eggs in case my substitutions don't produce
a successful batch.

I have to make this recipe gluten free....Wondering if I use 1/2 almond flour mixed with rice flour
would it taste okay?

Any thoughts?

Could you just add Flax Seed to this recipe for extra goodness?

Not much of a baker, so I don't improvise much.
