In all honesty, gcg, I'm not a chipotle fan, myself. There's something about the way smoking changes the character of a jalapeno that just doesn't do it for me.
I like smoked bacon. I like smoked Alaska salmon. I like some smoky bbq on certain meats -- it's just that chipotle flavor -- especially when combined with salmon (let alone canned salmon)? It's not ringing my chimes.
I'd go with another kind of sauce, rather than adobo, entirely, unless, as you say, you know what's in it.
