I had run into a streak of failures this week.  Most of it has to do with my soaking grains and nuts, because it takes time and effort, and then it just sometimes doesn't work the way I want.  But I have just been frustrated lately.  Part of it is because I did not feel well at all at the beginning of the week and I was having a hard time keeping up with the dishes.  So...  a dirty kitchen just makes everything so much harder to accomplish.  And then there were some curveballs that just seemed to pop up at the same time beyond my control.  Like today:

I soaked my almond pieces last night.  But I did notice that when I strained them to put them in the oven last night, that had a "sweet" smell to them I've never smelled before.  And then I tasted a few today to see if they were crisp and there's definitely a sweetness to them that has made me real uneasy because it's not like anything I've tasted before.  So, I probably won't eat them.  I'll feed them to my daughter, because I don't think they're bad, I'm just so sensitive.  Unless I think they're bad, I won't feed them to her and they are wasted.  Two other "nut soaks" this week went sort of wrong.  Both I've done a million times but somehow I wasn't as strict as checking the temps and the pecans I did were at like 175 degrees in the morning, when they should be 150.  That's probably not the end of the world.  I at first didn't want to eat them, but after looking into it some and asking some advice, there's nothing wrong with them, they're just not optimal.  But probably better than not soaking at roasting at all.  So I've eaten them.  And then my cashews, they came out way more brown and crispy because the heat was a little too high for them.  Those, just don't appeal to me at all as they just sort of turn to a powder when I chew them and taste a little too roasted.  

One of the days I was trying to soak oatmeal, and my son was holding the strainer for me.  Then when I plopped the oats in the strainer to strain, he let the strainer of good oats rest in a pot in my sink that had sitting water there because it was waiting to get washed.  ICK!!!!!!  So tossed those.  Then, I started over and realized I didn't wash the strainer.  So I tossed that amount.  Something similar to this happened on another day also, but this time it was my fault.  I had to soak 3x the amount of oats to get an end product.  Good thing they're not too expensive.  

It did get me thinking about back ups.  I did eat some nuts unsoaked to tide me over, but I'm not crazy about doing that regularly.  But it got me thinking, doesn't roasting or toasting them in a pan without the pre soaking also neutralize some of the antinutrients?????  If you eat them right away.  Someone suggested that roasting will cause the oils to go rancid.  I don't know if that's true or not.  When I buy almond butter I buy it roasted because I thought the roasting helps get rid of some of the antinutrients.  Plus, isn't peanut butter that way too?  So I thought in a pinch I could toast some in a pan or something.  What do you guys think?

And do you guys have streaks like this where stuff goes wrong?  I do have to say I've had some good meals go right this week, in which I'm very thankful for.  We've had a wonderful baked pheasant, we had some beautiful lamb chops broiled, some yukon potatoes I baked in an oven with some water, covered that turned out really really good, and for the most part our meals have been a HUGE blessing.  So, it's not all bad, it's just enough to be real frustrating.

In Nourishing Traditions it says that the only way to break down the enzyme inhibitor is through soaking as it starts the sprouting process. Perhaps take enzymes for those nuts that are not soaked, or have cultured product with it to aid in the digestion. Yes, I have some days that everything goes wrong and I've learned to laugh and be look forward to going to bed to start over. As soon as something happens I sit down to relax and re-group and then clean up after I am not rattled. (I'm usually quite organized and on the ball so I understand your frustration, it's hard to work in the kitchen when it looks like a bomb has gone off in it!)It does seem to go in cycles but this has been a particularly prolific year for me having mishaps which is unusual. Perhaps it will get back to normal for 2012! Take care and hope you have a good week.

It's weird, this whole year has been really hard for me, this is the worse I've felt in many ways, and the struggles just seem harder this year.  In some ways.  And it seems to be there are others that are experiencing this too.  My wife's cousin says "2011, the year of suck".  It's almost bizarre how hard it's been on many people.

Perhaps you should start again, keep a record of what your eating and how you feel. do it for only a week week first then go over it and see if you can spot something unusual, i promise it worked for us. so don't underestimate it.


make good notes of how you feel, then look not only at what you are eating before that even a few days, but what you are not eating too.

of course it could also just mean you are improving so much that you are just about to crack the whole thing, I hope so anyway.

Sometimes what goes badly one day has a way of darkening a whole lot of those days that came before it. Keeping a record, as was suggested, is helpful in more ways than one - one of them being a record of the times everything went right! If we have paid  a lot of attention to the hysteria that has been going on in the media for the last several months, that could darken a lot of otherwise perfectly wonderful days too!

When I'm trying to do too much at once, things start going haywire, and that's my sign to slow down.  For me, that means things like less cooked food and more fresh/raw, cooking turkey or beef patties instead of baking a turkey or a beef roast or frying fish.

As far as pecans go, I find that simply rinsing them seems to make them easier to digest, as though most of the anti-nutrients are on the surface.

I ate tons of almonds all week and now am thinking I really shouldn't buy so many in bulk but then the little packets of almond butter isn't always there and I wonder why the store won't stock it.  I want just almond butter, a few packets, not almond butter with chocolate.  They even stock hazelnut butter with chocolate in a packet and I think, who wants that.     I have bought the almond butter in the jar but tend to eat the whole thing over a week.  I'm not going to stop eating almonds so there is no point in overthinking it so much.

Interesting.  I've never thought of that.  Do you rinse a bunch, or just the amount you're about to eat.  I would imagine you don't rinse a bunch before hand.  Pecan's don't really bother me too much to eat raw.  When I'm at my Mom's I'll stuff a hanful in my mouth at times and she doesn't soak and dehydrate hers.  I'm OK with eating a certain amount of nuts not soaked and dehydrated, but I personally think it's better for you if you do it.  

As far as media, I don't follow politics, current events or whatever.  I normally don't watch the news.  Because it used to drive me nuts, and it's all negative.  Well, a lot of it is.

A food diary is a good idea, and I've done it in the past.  Many times.  I don't see how that will help me with achieving cooking success on a daily basis.  It seems like that has more to do with what foods are affecting me.  I have a pretty good heartbeat on that, but, there probably is always room for improvement.  However, I really don't feel that is my problem right now.  Especially if you're implying my consistency of my adherence to my diet.
