I'm VERY new here.....and I'm searching for something very simple to take to a potluck....what I mean by simple is easy and not too costly....BUT...I'd love to find something not just for my bloodtype (o) but would be at least fairly compatible to my dh who is a B. Any suggestions? I guess what makes this difficult is that it needs to feed us completely AND feed others. We won't be able to eat much if anything that others bring....so I feel it needs to be a casserole or something equally filling and nutritious....so I don't want to just take a side dish of veggies or rice as I don't think that's enough to contain us through the evening. |

maybe a rice, turkey casserole using vegetable stock, and veggies.
I have a potluck the end of this month. I'll have to do the same. It's to be Mexican so I know I won't be able to eat much. (cheeses, will be in everything) I thought I'd make muffin cornbread. (amaranth and rice flour) from one of the recipe in the data base. Will be baking them today as a test. |

I'd suggest some kind of a casserole with a brown rice base, plus some kind of broth (veggie, beef, or turkey), lots of chopped veggies, and small pieces of meat. You can also add peas and/or great northern beans (good for Os and Bs) if you want to add veggie protein to the dish, either to stretch the meat or if you want to make it vegetarian. I think it would taste better with meat though, even in small amounts.
If you want to make it compliant for the Bs, don't use chicken or tomato. |

Depending on what is asked for, I will take things that I cannot eat (and hope that I succeed in giving away in leftovers). |

Turkey chili. Everybody loves chili.  I used to make chili for DH to take to work parties. He brought it in a crockpot, plugged that in when he got there, and by lunchtime it was hot. He never had any leftovers. |

1 pound ground turkey 1 cup grated carrots 1/2 an apple minced 1/2 an onion minced and sauteed in 1 T of butter or ghee 1 handfull spinach fresh or frozen cut up and wilted with the onions 1/2 tsp basil 1/2 tsp of sage 1 tsp of sea salt 1 T of ground flaxseed meal 1 T of flour(rice, millet, quinoa according to type) 1 T olive oil 1/2 tsp of powdered kelp assemble all of the ingredients into a loaf and bake at 350F for 1 hour uncovered for a potluck I double the recipe but bake it the same time This recipe is courtesy of Cpcat67 about 5 years ago. |

These are great ideas....thank you everyone. I decided on a roast with veggies for this particular one coming up....but I love the turkey meatloaf idea and the casseroles mentioned, etc. above....maybe next time (there is one at church every month) I'll take two dishes...the turkey meatloaf and a side dish (casserole, rice, salad, etc.).....thank you! |

It is tasty. I've used it for yoga parties and family gatherings and even the veg heads will bend their rules since it isn't red meat and I can point out that it is loaded with veggies and glutein free. You could even skip the butter or ghee(sub more olive oil) and make it totally dairy free. It is specifically designed to be low allergy, it was concocted for an autistic boy who was celiac and egg allergic. Best of all even my Picky little sister loves it. |

See my recipe above. One of the acceptable glutein free flours mentioned was quinoa. In fact it was the only one mentioned in the original form of the recipe, I just added the other choices of rice and millet because I tested them and they work. |

This is a pretty good idea and would probably be easy to make. You could add some beans that are favorable for both of you. |

You are welcome Andy though I must point out that the recipe was developed by another poster, Cpcat67. When she posted it about 6years ago it never made it to the recipe base. BTW I don't add any extra baking time when I double it. I do shape it long and narrow like a baget for parties though. A doubled recipe does go a long way, people forget how much vegetables are in there to bulk it up. |

We finished the leftovers of the Turkey Meatloaf recipe tonight. Wonderful recipe. I added some chopped celery to the sauteed onion and swapped out basil for thyme. Everyone loved it.
It reminded me of the flavors of Thanksgiving and even had a bit of a sausage taste. Maybe that was the kelp.

I tried to come up with a version that didn't have the kelp and the flaxseed for relatives who would never go in a health food store. Totally Blah! The kelp is vital in my opinion and horribly expensive, the local health food store only carries it in one pound packages. I think I'll make it for my extended family Thanksgiving on Nov. 20th. |

I am lucky to have purchased a small jar from my health food store a while back. It was quite pricey but now I have a use for it! I should have kept it in the fridge but moved it there now. I can also pick up the layer of flavor the flaxseed adds. I agree the recipe is really elavated from these ingredients. My older son, the pickiest of picky, announced tonight what a great meatloaf it was! My husband disappointed me by asking "where's the ketchup" but I had to get over it. This meatloaf stands beautifully on its own and tastes like I am eating a Thanksgiving medley. |

Nothing irritates a chef more than seeing somebody add salt/steak sauce/ketchup to his dish without tasting it first!

Forget about taking that Turkey Meatloaf to a potluck, I'm keeping it for myself  Made this last night, it's soooo good. And easy! I prepped veggies night before, assembled in morning then baked it when I got home from work. One slice left over for lunch today.
