I usually buy carrots in bulk bags with the greens already removed, but last week I bought a small bunch with the greens at the farmer's market.
Is there anything I can do with the greens?
Is it safe to assume that carrot greens are are compliant when both carrots and a variety of greens are neutral or better for all 3 of us? |

I use like parsley (add to soup, salads, ...).
They are strongly flavored.
Some people react adversely to them.
I assume they are unrated (neutral).
I do not try to make sure I use all the tops I have.
They are supposed to be high in potassium.

I personally love the carrot tops. They have waaaay more Vitamin A than the actual carrots. I blend them with banana & dandelion greens to make a smoothie.
They are also great in soups! Om nom nom... |

OK, I'll use some in the next batch of turkey broth I make, but I'll be careful not to over-use them. Maybe I'll freeze them in small bunches for future batches of soups.
ooh, I just had another thought. I'm busy making kale chips right now, and I wonder how the carrot greens would taste if I toasted them in the oven with olive oil and salt. Maybe I'll try a small batch of that when the kale chips are done. |
