Ingredients for Quick Or Baking Powder Bread Recipe
4 cups flour 1½ cups milk 6 teaspoons baking powder 1 teaspoon salt ½ tablespoon sugar 1 tablespoon shortening, melted
Instead of the 1½ cups of milk, i putted rice drink!
But, the result was like dried mud!
On Wikipedia, about "Soda Bread", it is said: "The buttermilk in the dough contains lactic acid, which reacts with the baking soda to form tiny bubbles of carbon dioxide. Other ingredients can be added such as raisins, egg or various nuts."
I heard that some fruits and vegetables had some lactic acids!
I know that some carrot juices are lacto-fermented...
So, my question is, can we replace the buttermilk or the milk (i don't know if it is more or less similar using the one or the other) by a vegetable product that contains lactic acid?
Or, otherwise, if they are other methods to make this kind of recipe?

Did you use baking powder or baking soda? Which did the recipe originally call for?
Baking soda is just sodium bicarbonate, and needs to react to an acid (buttermilk, vinegar, lemon juice, or cream of tartar) in the recipe to create bubbles.
Baking powder is a mixture of sodium bicarbonte with an acid, and usually some kind of fillers as well. You can make your own baking powder: 2 parts baking soda plus 1 part cream of tartar and one part starch, such as arrowroot powder. You can skip the added starch, but then you need to use less of it; 1.5 teaspoons of the starch-free mix equals 2 teaspoons of regular baking powder. Or, just remember to use half then half: if a recipe calls for 3 teaspoons baking powder, use half of that (1.5 teaspoons) baking soda plus half of that (3/4 teaspoon) cream of tartar.
If you can't have cream of tartar, I'm not sure exactly how much lemon juice you would need to use in its place.

rm, Have you had a swamiX done? Are you following Blood type or genotype? I am an A sec like you and I do not do well with gluten or yeast...and I crave good bread!!!! I did finally find a spelt bread that is yeast free and made with just water and sea salt. Its not bad. If I lived in your country I could not resist the baguettes, or the provencal walnut breads or fougasse!!!!! I have visited several times and seem to stuff myself with your wonderful selections of cheese and bread!

I am following the Blood Type Diet! For the Genotype Diet, i tried to test myself but i find it difficult with the measurements of the body if i remember well! So i haven't finished all the testings! And i haven't done the swamiX! Is it a good thing to do it?
