The "original" kefir was made with milk, although I'm not sure what kind of milk. Since I beleive kefir came from Arabia, it may have been camel milk. The kefir grains themselves can be cultured in any kind of milk, even coconut milk (as discussed on Traditional Foods forums, as a non-dairy alternative, long before I learned about BTD.)
Water kefir grains are similar to milk kefir grains (and I think milk kefir grains can be converted to water kefir grains) but I think the flora is slightly different. These grains can be fermented in sugar water or juice. I'm currently hesitant to try them because it's not rated in SWAMI. Regular milk kefir is an avoid for me (even though it made my tummy feel good when I used to drink it) and I don't want to mess up my health with any experiments right now. But it's supposed to ferment something that tastes like soda, but is full of probiotics. |

Thanks for the info ruthie. "Kefir" is a super beneficial for me. It's listed as a dairy item so it must be the milk kefir. I thought the original kefir was made from grains and not dairy..? Really? |

I just might have to do some experimenting - thanks for the link  MF I have only heard of milk, juice or water kefir?! I always thought referring to the "kefir grains" meant the granules that got added to the liquid to make kefir??!! |

The site you linked doesn't say anything about kefiring "grains". It does sell the kefir "grains" though, which are the little bacteria spongy little things that you put into your water, milk whatever, to do the kefiring. Or culturing. I would recommend trying it if you never have. But if you're like me, proceed cautiously. I get violent reactions to kefir. Especially when I made it with the grains. It may be that the kefir is so aggressive to whatever bad stuff I have in my gut that I feel awful. And I mean in such minute amounts. Like just tasting it off a fork I dipped into it. I'm still uncertain if I did something wrong in making it or what. But I'm sensitive. I get this with many cultured foods and have to take it real slow. I'm probably not the only one, although I've never heard of anyone as sensitive as I. But I think kefir and other cultured products are probably a really great idea. My main ones are cultured veggies though. I do eat a little cultured butter / cod liver oil that seems to work well, but I'm also very sensitive to that. And I'm trying to get some sourdough bread made. |

Hi, I've received a kefir without grains! Searching in internet I think his names is kumis, but i'm not sure. Do you know about it? The result is like kefir, but you don't have grains, only bacterias. You always leave something of kefir in the bottle and fill with milk and wait 24 hours. And the bacterias do they work. It's easier and you don't have too see your grains growing,  |

I'm once again very fatigued & will be breaking up with kefir for probably the last time. It's just not working for me. I do have a great source of grains though. Google Marilyn the kefir lady. She lives in Ohio & sells authentic grains for $20. I read her website, she seems like a very nice lady. |

Dairy kefir is different from water kefir. Here's a good site for how to make water kefir Culture for Health. If you are trying to wean yourself off of sugar, water kefir may not be the way to go.  |

Aaah  No I couldn't watch - have dialup  I was always told that when sugar was added to fermenting foods, the effect was negligible, due to the sugar getting "eaten" in the fermenting process  |

Water kefir needs a sugar source. You can use sugar water, or you can use juice. It doesn't need to be refined sugar! It's my understanding that juice was the first thing used, and later people realzied sugar water worked too.
And also remember that the sugar gets converted into something else as part of the culturing process, just as kefir made from milk is incredibly low in lactose- the milk sugars get used up in teh culturign process. |

I have made water kefir! It is So good, and it is refreshing! Has a little bubbly in it....great on a hot day.
I made it using very little brown sugar and used sulfate free dried fruit - It was SO yummy! I still have my grains in the fridge, but I fear that they are dead since I have not fed them in a while.

SUGAR-REDUCTION of ready-to-drink water kefir How much sugar does water kefir contain? you may ask. Well, there's a good reason why I chose capital letters for sugar-reduction. The question is a concern for many individuals who wish to prepare water kefir. I receive lots of emails about this question, and the topic often comes up on my internet lists. I shall try to clarify here.
Most concern regarding sugar content of water kefir that I've experience, is from folks believing that because a reasonable amount of sugar is used for water kefir, then water kefir must contain a large amount of sugar. Folks on an anti-candida diet fit this category, for sugar is recommended as a no-no for candidiais [yeast infection]. Diabetic also share the same concern. I thought the best way to demonstrate sugar percentage of ready-to-drink water kefir [a beverage fermented for 2 days with SKG], is to show a photo of my evaluation [left].
The thick, not-so-sweet, but quite appealing flavoured thick syrup, was extracted from water kefir by reducing ready-to-drink [strained] water kefir by boiling under vacuum. The water kefir recipe involved 6 cups water, 1/2 cup raw sugar, 1 tsp blackstrap molasses, 1/8 tsp each of eggshell and oceanic coral powder, 1/8 tsp sodium bicarbonate, prepared with 1 cup SKG brewed for 2 days. The SKG increased from 1 cup to 2 1/2 cups at day 2, which is common growth-rate with the above recipe cultured with my exceptionally good growing SKG.
We can clearly note the initial amount of sugar and the resulting reduction of more than 80% of the original sugar content. The fact is that the less-than 20% sugar left in the water kefir after a 2 day ferment, is mostly fructose, a mono-saccharide [single sugar]. Fructose is extremely easy to digest, compared to the original sucrose. We also need to consider that the residual syrup in the photo contains some water, so in effect there is even less sugar content compared to what we see in the photo. To explain again, sucrose or regular table sugar, including any sugar-type derived from sugar cane, is made up of a molecule consisting of 2 single sugars-- Glucose and Fructose. This sugar is known as a disaccharide [di means 2, saccharide means sugar= two sugars]. The organisms of SKG break down the disaccharide sucrose into its 2 basic units, glucose and fructose. The grain itself is synthesized from just the glucose alone. Hence the reduction of sugar of water kefir with good growing SKG, for the grains are separated by straining the water kefir-- they are not consumed, taking the glucose that the grains are made of with them. Even if SKG were consumed, they are not easily broken down if at all through gastric digestion, for the glucose that the grains are made up of is a dextran, similar to a polymer or a natural plastic that gastric enzymes are unable to break down. To conclude, we can rest assured that if your SKG are growing well, by at least 50% per each batch, then sugar reduction is just as good, and the resulting water kefir contains a much smaller percentage than what you began with. Water kefir prepared with good growing grains is quite suitable for Diabetics and those on a low carb diet. [See also FAQ 46 at my Kefir FAQ web page]

It's an avoid on my SWAMI, so I won't drink it- even though I like how my tummy feels when I drink the goat milk kefir.
I do much better with beet kvass as my probiotic food. |
