I love inventing recipes.........here are 2 fun ones that I came up with this week Mocha Popsicles I used a Popsicle tray that holds 4 popsicles... Trader Joes soy milk brewed coffe 1 TBS peanutbutter 1TBS carob powder To measure the liquid I measured with the popsicle tray putting coffee in 2 slots and soy in 2 slots. Toss all ingredients in the blender....blend, pour and freeze.....Makes a delicious after dinner treat  Honey Cinnamon Breakfast Tofu bake 1 tub of extra firm tofu 2 eggs 1 tsp vanilla 1/2 tsp cinnamon 2 TBS honey Whip it all up with a hand mixer and spread in a thin layer in a 9X13 in pan. Bake at 350 for about 30-35 mins. I took 2 rectangles and spread peanut-butter between them and sprinkled the top with flax. It's like a custardy happy yumminess! Had this for breakfast along with a gigantic salad |
