Hi,

Does anyone have a great broccoli soup recipe that is A compliant?
I'm really missing potatoes!  I was thinking of trying yellow split peas as a thickener but now I'm feeling timid.

I need comfort food!!!!!

I have not tried this one yet but plan to soon. It looks pretty tasty to me

Sautee in a large pot until tender:

1 Tbs minced garlic
1c. finely chopped onion
1/2c. minced celery
Olive oil or ghee and salt to taste

Add and cook till broccoli is tender:

5c. stock of your choice
1 1/2 lbs fresh broccoli, chopped
1Tbs. fresh thyme
Large handfull of fresh spinich (add just before blending)

Blend till smooth.

you can add any compliant bean or nut butter to a soup to make it creamy.

depending on the diet you are following...
always check your lists to substitute accordingly.

How about a large handful of fresh kale or swiss chard before blending?  Would that work since Spinich is off limits for me?  I think I might have to cook the kale a bit   before blending....
