Let me see what I can come up with.  I just made a great loaf of spelt bread, which is my first real success.  I pulled the recipe off a site (I forget what it was now....but I did keep the recipe) that gave some great spelt advice:  they said if you handle spelt too much it gets tough, which is what always happened with my recipes.  I kneaded it for too long.  I'll post sometime in the next couple of days with the best thing I can come up with.  Glad you asked!
