I have those Drated white lines in my fingerprints so I guess I need to lay off the gluten/lectins.
Now add to that the Warrior diet.
What sort of birthday cake do I make for myself?
Maybe it should be made out of fish.. and kale?

My family likes to celelbrate and I have put a damper on it for them.
  I did look at the flourless cake recipes, some call for a ton of eggs.

Hi Dottie  and best wishes for many happy birthdays again !
Look in this thread Almond oatmeal pie crust[/u and if you like not oat substitute with sweet rice flour or amaranth or quinoa flour. I made a flat roud thin crust  and star biscuits with the same mix to top it and used grape sweetened strwberry jam last year the first of January. Sweet rice flour is very similar to wheat flour for a lot of needs in cooking and baking (rising forgotten )

Well that pie crust was my recipe but there is a carrot cake you might be able to have. Look on the bloggers page on the lower right for Robin. Then look on her archives for the carrot cake recipe. I uses brown rice flour. The frosting uses cream cheese but you could probably substitute chevre. It is a real hit at every get togather I've taken it to. It does take a bit of work though.

Happy Birthday Dottie!  I think if you google walnut flourless cake, you may find a delish cake
recipe.  I will look in a minute and see if I can find it.  I made one once with walnut flour (ground up
walnuts) with a mascapone icing.  Maybe instead of marscapone, one could use quark if it's available.....just an idea.

If you want a millet cake, you can take the "cornbread" millet muffins recipe and just dump the batter (add some sweetener of choice, like agave or pineapple juice concentrate) into an 8X8" pan and bake for half an hour or so.  I made a pineapple upside-down cake last night with this recipe.  I heated a little olive oil in the pan in the oven, then when it was hot I sprinkled in a mixture of crushed pecans and agave.  It browned immediately.  Then I put a layer of canned pineapple slices on top of that.  I made the "cornbread" millet muffins recipe with a few tablespoons of pineapple juice concentrate mixed in, and dumped it on top of the pineapple slices.  I baked it till it looked done, let it cool a while, then flipped it over out onto a plate.  It was really, really good.
