I for one have never heard of Dashi but it does sound like like something I would like to try, thanks Dottie1

I made the Dashi. I bought the bonito flakes and put them in with the Kombu. Smelliest stuff those bonita flakes, they don't taste the same as they smell.
It did enrich the miso broth,  very nicely.

Dashi adds that authentic touch to miso - it's delicious, and yes, it tastes better than it smells. Like a lot of really good foodstuff.

Any of the Japanese mixes in the asian market will have a Dashi in it...along with the E621.

Though it is typcially Bonito Flakes {Katsuoboshi} & Kelp {Kelp}
Basically any fish stock & Seaweed will work.

Many variations on Dashi depending on the actual dish to be prepared.
