This was tonight's invention and I thought it would make a good holiday cake too.

Eggless Carrot Cake

1/4 c. oil
1/4 c. pineapple juice concentrate
1/4 c. water
1 tsp. vanilla
1/4 c. water + 1 Tbsp. flax meal (or an egg if allowed)
1 c. millet flour
3/4 c. arrowroot
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 grated carrots
1 mashed kiwi
walnuts

Preheat oven to 350.  Boil 1/4 c. water and mix in 1 Tbsp. flax meal; set aside to thicken and cool.  In mixer bowl, mix oil, water, vanilla and pineapple juice concentrate.  In separate bowl, mix all dry ingredients.  Grate carrots and mash kiwi.  Add to liquid ingredients.  Add flax meal mixture and beat well.  Add all dry ingredients and mix gently.  Pour into greased 8X8 metal pan.  Sprinkle walnuts on top.  Bake 40-45 minutes.  Cool, cut into squares.  (Serve with Cranberry Sauce if desired).  


Cranberry Sauce

2 c. fresh cranberries
1/2 c. water
1 tsp. compliant citrus zest (I used lime--orange would probably be best)
5 Tbsp. pineapple juice concentrate
1 tsp. vanilla (opt.)

Rinse cranberries and discard mushy ones.  Bring water to boil in medium pot, add cranberries and pineapple juice concentrate.  Boil, slightly higher than a simmer, for 10-15 minutes, stirring often towards the end, till berries burst and sauce thickens.  Remove from heat and add vanilla if using.
