I have Cook Right For Your Type and   there are a few good recipes for muffins.. banana-walnut is one,  quinoa- almond muffins is another, and pumpkin  almond is one more....
I am looking for something that is most like a bran muffin or glorious morning one.. anyone have any great ones  they'd like to share???

I just tried the rice flour ginger cookies...delicious, but I modified to suit myself...I added these to the basic recipe:
white rice flr (what I had)
1 egg
half tsp baking soda
quarter c. sugar

Quinoa Muffins
~~~~~~~~~

2 c. quinoa flour
2 Tbsp. arrowroot
1 1/2 tsp. baking soda
1/2 tsp. salt
1/3 c. toasted nuts (opt.)
1 c. cranberries, blueberries, or acceptable fruit bits
1/2 c. warm water
1/2 c. fruit juice (I use pineapple juice concentrate or plain apple juice)
1/4 c. olive oil or walnut oil
1/4 agave nectar or honey

Preheat oven to 375.  Line a 12-cup muffin pan with paper cups.  In a large bowl, mix dry ingredients and nuts, if using.  In a small bowl, combine liquid ingredients.  Pour into flour mixture and mix just until combined.  Don't overmix.  Spoon into the prepared muffin.  Bake 17-19 min. Cool in pan 5 min.  Remove and cool completely, if you can wait that long.  I have to spray the paper cups also with a tiny bit of oil to keep the muffins from sticking terribly to the paper.

I saw this recipe earlier tonight and thought I would make it. Didn't have quinoa flour, so used amaranth instead. In the middle of whipping this up, I couldn't find my muffin tin. Eeeeek! So, ended up put the mixture, which was quite dry, into a small pyrex dish. Anyway, I had thrown in a hand full of blueberries and blackberries with some walnuts. It turned out like more of a cobbler, which was really quite satisfying. Will make it again as muffins, and another cobbler.

all these great ideas!!
I made some yesterday... I'm not sure I followed any one particular recipe, but they turned out GREAT!!  and  I  JUST tasted one this morning.. so good... I never knew I could actually have a muffin on the BTD...I've pretty much avoided all grains and bread type things for the last 4 years ( have I been on that long??  yikes!)
so this , along with my green tea, makes me quite happy for breakfast.  Yesterday I had some canned pumkin puree , heated, with some melted ghee and flax seeds.. LOVED it!  so now I have two things I  look forward to for breakfast instead of my coffee or  sugar in tea...  these two things seem to satisfy whatever need I have in the morning.... YiPppPpY!

I'm not going to take the time to post it in the recipe database at this time (my children are just waking up from their naps and will need me in a minute), but anybody who has time on their hands....feel free!

I make my own quinoa flour by dumping quinoa in my vita-mix (a blender might work just as well) and grinding it for a minute.
