I made Injera bread today.  It was very good.    The recipe didn't tell you how to ferment the batter ,  but I kinda figured it out after reading several articles about it book2).  Just one cup of Teff flour, one cup of water and a pinch of salt.  I used a stainless steal bowl, put flour in first then slowly added the water then the salt.  Put a cover over the bowl then set it aside for 2 days.  It was all bubbly and smelled kinda bad, but when I cooked it, ( like a very thin pancake ), it tasted very good.  I think if I just let it ferment for one day it would make good tortillas .

did you roughly mix it before putting the lid on?

and did you knead the dough before cooking it, or mixed it again?

did you make a ball and flattened into a pancake?

I did mix it before I put the lid on to make sure there weren't any lumps,  then I stirred it again before I cooked it.  It's the consistancy of cake batter, so no kneading.  I used a cast iron skillet with a little oil, heated til a drop of water danced around, then I put a large spoonful of batter into the pan and swirled the spoon around on it til it was spread pretty thin, thinner than a pan cake, thicker than a crepe.  I turned mine over, but I think you're sposed to cook it til all the bubbles pop and it's cooked through.

Rodney, I added the recipe, but it listed teff as type O beneficial.  Teff is a type O neutral, eat often, and I don't know how to change that.

Yes, the value in my Fatigue book says that Teff is neutral, eat often, but when I completed the recipe and pushed add recipe it came up as beneficial.  I'm guessing I just don't completely under stand.  However the recipe data base looks really good.  It was very easy to add my recipe.  The instructions were easy to follow.  Good job to everyone who worked so hard to put it together.

Is this the recipe database entry you made: Ethiopian Injera Bread

In it the teff is listed as type O neutral.
