I was making a small batch of ghee today and happened to be tossing the foam into a pan that was already on the stove. Well.. I decided to make some rice (which I always toss a decent chunk of butter into anyway) and decided to just brown the rice in the "ghee foam" with a little extra ghee added to get everything all coated. Maybe I'm imagining it, but I skipped adding any butter and the rice that came out had an extra delicious nuttiness and buttery taste. I know this won't be a useful tip to all the dairy avoiders, but as a B.. haha.. I love my dairy products and hate to waste anything.
