I have some great unsweetened almond milk that I have tried with a coffee-like drink, but it's too thin to really taste like cream or half-and-half, not even like a nonfat latte.

What can I do to give it more substance or use instead? (Wondering if some rice protein powder might help)

silken tofu in the mixer with your hot beverage works great.
that is if you are not a nonnie or react toward tofu.
and a tsp of ghee, added to the mix.

it's a hard reality, but you just can't get your jollys from  thick rich coffee and sugar and cream / creamer..!  bummer.. but the results are SOOO amazing! stick with  it..   it's just a new way of   starting the day!  good luck with it.. it IS a journey...
try some green tea with agave nectar and a bit of soy..
I've been  working on this for a LONG time, but you just have to want to feel the "health" of healthy living to appreciate this...
and if you DO use soy, or almond milk, read the ingredients.. make sure there is not a bunch of "junk"  added..  many of the "milks"  have a ton of avoids in there to make them appealing... beware!

Dandelion root is a coffee-like beverage I've tried... just looking for something to add to it for a more substantial presence than green tea. There's a great almond milk out there (in my fridge) without anything except basically water, almonds and salt. Just looking to add a little oomph to that.

PLEASE share the brand name of this w/ me.  The only almond milks I can find have junk in them and if I make it at home, now matter what I use, I cant get all the grit out and wind up choking on it. thanks.

I would consider that to really be soy milk w/ almond flavor tho.    I've seen that at WF, but would really love to find a clean almond milk.  Might work for someone else.

ALL  of that    
the last thing I tried looked much like what Drea posted. still too much grit. however, it might just be me.........I choke easily on anything gritty like that. If one tiny piece of salt gets in my throat in the wrong spot, it really chokes me........so like I say, it might just be me.  homemaded almond milk has been out for so long, but really need to get off the carageenan. I think soy is an avoid in the Cardio book, but then so is carageenan, I'm sure
