They are a great tasting, versatile bean. Out of the bean/legume family, azudki beans have the most balanced protein and carbohydrate ratio.
They are somewhat sweet tasting. They are used in both savory and sweet bean recipes. They may sub for kidney beans in recipes if size factor is not a concern, albeit they can get mushy if overcooked and do not hold their shape as well as kidney beans.
Their taste and flavor is not as prominant tasting as the kidney bean from my recollection, since I have not tasted kidney beans for a long time, since they are an avoid flor blood type A secretors.
