I don't know if there are others of you out there who have this need, but I thought I'd post this for all of you cooks... I've been going to a 6:30 pm yoga class twice a week with my husband ( he's lost 45 lbs on the BTD!). We don't get home till almost 8pm... I leave around 6 or so to get there.. so I came up with this to stick in the oven.. I just pop in it when I leave and when we get home, whalla! we have a perfect meal waiting... here's what I do:
I make meat patties out of ground lamb or ground turkey ( you can use bone in skin on chicken breasts for those of you who eat chicken). I place them in a big glass pyrex dish. In a seperate large bowl, I cut up all sorts of veggies.. the ones I like best are kale, onions, sweet potatoes, and whatever else is compliant. Then I generously pour olive oil them and put in like a table spoon of turmeric and a tablespoon of curry... so I toss the veggies in this ... and pour over the meat patties... then I put this in the oven at 275 degrees for about two hours.... and it turns out wonderful! The kale gets a bit crunchy, so I usually try to put some of the sweetpotatoes or onions over the kale... anyway, thought this might help some of you who need to have something ready when you leave for a two hour stretch!

That sound very good. works well with fish as well but cooking time would be less. I so like the greens cooked this way. fresh squeezed lemon on top after out of the oven.  |

do NOT do this with fish! lol... fish... 400 degrees... 8 to ten minutes!

all I do is round them into patties.. not too thin... just be sure to be really generous with the curry and the turmeric and olive oil... I put a TON.. and it tastes sooOOOo good... hope you all have as much luck with it as I do! I did it tonight, too, because we had yoga.. I did rosemary and some fennel... but it wasn't as good.. I was just doing it for a change.. OH! and I forgot to tell you that I do it with tofu, as well.. I do my own maranaid of almond butter and tamari and some pommagrante juice.. just slice the tofu.. and I do cover the tofu with foil.. but I put it in for two hours at 275 and it turns out GRAND.... so this is something to put in the oven when you go do yoga or exercise! and then you come home to a delicious meal... my boys played a lot of spring sports.. soccer and tennis.. and I found I could stick this in the oven and have a nice meal waiting.. |
